The last few weeks I have provided you with several sweet recipes to cure those sugar cravings. Now it is time for a good ol’ recipe that is a hit for any occasion. Un-fried Chicken.

Fried chicken will usually please a great percentage of the crowd, but what about making this spectacular plate without all of the grease and mess involved.

Put a little twist on the traditional dish and make it a new group favorite. You just can’t go wrong, especially when you have a larger number of mouths to feed. This is an easy-to-prepare dish that goes great with any number of side dishes.

Don’t just take my word for it, try it out for yourself!

 

Un-Fried Chicken

 

8 skinless boneless chicken thighs, trimmed of all visible fat

1/2 teaspoon garlic salt

1/4 cup light mayonnaise

Zest and juice of 1 lemon

1 egg white

1/2 teaspoon hot sauce

1 1/4 cups cornflake crumbs

Preheat the oven to 375 degrees. Spray a large shallow baking pan with nonstick spray. Sprinkle the chicken with the garlic salt. In a large bowl, combine the mayonnaise, lemon zest, juice, egg white, and hot sauce. Add the chicken; toss to coat.

Place the cornflake crumbs on a sheet of wax paper. Dip the chicken into the crumbs pressing so the crumbs adhere. Place the chicken in the pan and lightly spray with nonstick spray.

Bake until the chicken is golden brown and cooked through, 40 – 45 minutes. Do not turn.
