Busy calls for easy

Summer has officially hit the Noyes household. Between work, T-ball, Vacation Bible School and anything else we can fit in, we barely have time to breathe, let alone enjoy some time in the kitchen!
This recipe, however, is a quick and easy way for a fun summer treat to put out on the picnic table for the neighborhood kids. You can use your own homemade cookie dough which isn’t all that difficult either. However, this rendition is a quick fix to moms without a lot of time. Plus, the more time I spend making the dough, means the more time I spend eating those little spoonfuls that happen to just spin out of the mixing bowl. So I will stick with the pre-made this time around!

Lava Cookies

1 roll refrigerated chocolate chip cookies
9 teaspoons semisweet chocolate chips
Ice cream, if desired
Chocolate-flavored syrup, if desired
Maraschino cherries, if desired

Heat oven to 350 degrees. Spray 9 regular-size muffin cups with cooking spray.
Remove cookie dough from wrapper and spoon 1 tablespoon dough into each muffin cup. With fingers, press dough to flatten in cups.
Place 1 teaspoon chocolate chips on top of dough in each cup. Place additional 1 tablespoon dough over chips in each cup and press lightly to flatten.
Bake 20 to 25 minutes or until tops are golden brown. Cool in pan about 10 minutes.
Remove warm cookies from muffin cups. Top each with ice cream, chocolate syrup and a cherry.
